Zingy whipped cream

This unusual whipped cream is pure indulgence for citrus fans!

Ingredients:
  • 25cl whipping cream
  • 30g icing sugar
  • 1/2 teaspoon ground Ma Khaen berry
  • 1 pinch fleur de sel
Whip the cream in a cold dish with an electric whisk. Gradually add the icing sugar as you whisk and add a pinch de salt (and the Ma Khaen berry unless you prefer to infuse it in the cream) Sprinkle the whipped cream with Ma Khaen berry cracked with a pestle and mortar. Our tasty tip: leave the Ma Khaen berry to infuse in the cream overnight.

Vinaigrette

This Ma Khaen berry flavoured vinaigrette is perfect for your summer salads!

Ingredients:
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sesame oil
  • 3 tablespoon olive oil
  • 1 teaspoon cracked Ma Khaen berry
  • A pinch of turmeric and salt (season to taste)
Start by mixing the spices, then the rice vinegar and sesame oil. Then gradually add the olive oil. Your vinaigrette is ready – pour generously over all your salads!

Marinade

Use this marinade for your beef skewers before grilling them on the barbecue or plancha.

Ingredients:
  • 25cl olive oil
  • 1 clove of garlic
  • 1 large onion
  • 1 shallot
  • fresh parsley
  • fresh coriander
  • 1 pinch Ma khaen berry
  • Salt and pepper
Peel and finely chop the shallots and garlic. Peel and finely chop the onion then chop the parsley and coriander. Use a pestle and mortar to grind the Ma Khaen berry Crush the garlic, onion, shallots, parsley, coriander and Ma Khaen berry together in a bowl. Add salt and pepper to season. Gradually add the olive oil, then mix well. Use as a marinade for beef before grilling.
