Hot chicken colombo

Colombo is the West Indies curry. It is a spice blend similar to curry or massala but it is also a traditional Indian dish which is very popular in the French West Indies since the 19th century.

Ingredients for the recipe:

Methods:

  1. Start by washing, peeling and chopping the potatoes.
  2. Then chop the onion and fry in a casserole dish in some olive oil.
  3. Add the chopped parsley and fry for another minute.
  4. Add the chicken pieces and fry for a further 3 minutes then add the potatoes and the colombo, bay leaf and thyme.
  5. Add the lime juice and a glass of water.
  6. Mix well then sprinkle the West Indies chilli pepper over the top.
  7. Cover and leave to simmer over a low heat for 1 hour.
  8. Serve with rice to sooth the heat of the West Indies chilli pepper.
