Ingredients:

• 6 cloves of garlic;
• 1 teaspoon Terre Exotique thyme;
• 1 tablespoon Terre Exotique coriander seeds;
• 2 Terre Exotique bay leaves;
• 1 litre Terre Exotique Lesbos olive oil;
• 1½ teaspoon Terre Exotique French ground pili-pili chilli pepper.

Methods:

1. Choose an empty bottle with a tight lid. Pour in the oil, coriander, chilli pepper, thyme and bay leaves.
2. Mix and leave to infuse for at least ten days.
3. You can use your chilli oil wherever you like, on your pizzas but in plenty of other dishes to add a spicy hot kick!
