CAJUN CUISINE 

Cajun cuisine is a mix of very varied French, African and creole culinary traditions. It’s a warm family-style cuisine, ever popular yet creative and the ingredients are in everyone’s kitchen! Simple dishes honouring local produce, always plentiful to be shared in true Louisiana style. Adopt these tasty Cajun spices in your marinades for chicken or shrimps, why not sprinkle them over your oven-baked potatoes.

Cajun marinade

This Cajun marinade releases warm, cheery, super tasty aromas. Great with beef, pork poultry and King prawns. Ingredients:
  • 10 cl olive oil
  • 2 tablespoons wine vinegar
  • 2 teaspoons Cajun mix
  • 1 sprig of thyme
  • 1 tablespoon tomato paste
  • 2 cloves garlic
  • 1 onion
  • Salt
  • Belem black pepper
Put everything (except the sprig of thyme) in a blender. Add salt and pepper to taste. Spread the marinade over your meat or fish, add the sprig of thyme and place in an airtight bowl. Leave in the fridge for: 2 - 4 hours for beef and pork / 1 - 2 hours for poultry and King prawns / 30 minutes for shrimps.

Cajun spiced potatoes

Ingredients:
  • 6 - 8 large potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun mix
  • Salt
Wash the potatoes the cut into wedges or chips. Mix the potatoes in a bowl with the olive oil, the Cajun mix and salt, until the potatoes are completely covered in the mix. Spread the potatoes out on an oven tray and bake for 35 minutes at 180°C. Serve with a home-made cream cheese and chive sauce.
